Brinjal Bhurta
Ingredients:

- Roast the brinjal on an open flame or bake in a oven till soft and browned from outside.
- Peel and mash well.
- Chop onion. Ginger and green chilli and fry lightly in hot fat.
- Add chopped tomatoes and seasoning and mix well.
- Add mashed brinjal and mix. Continue to fry till mixture blends and fat separates out.
- Serve hot with chopped coriander leaves and garam maslala.
